Low-temperature slow brewing results in richer aromatic substances and more thorough reduction of off-flavors. “2” refers to the sterilization and deoxidation during the brewing process, ensuring pure yeast fermentation and a purer taste. The absence of oxidation during production also makes the beer fresher and more refreshing. “5” signifies the five-stage infusion mashing process, which maximizes the action of enzymes in the malt, leading to more complete extraction of ingredients in the Wort, richer sugar and amino nitrogen composition, and a more complex and rich aroma in the beer. “8” stands for eight days of external circulation under deep cold conditions, achieving a harmonious blend of aromas, crisp taste, and better stability.
Another critical factor contributing to the success of Jinxing Xinyang Maojian Chinese-style craft beer is the yeast strain used. It is understood that Jinxing Beer has a comprehensive yeast strain library. After more than forty years of domestication, cultivation, hybridization, screening, isolation, and high-purity optimization, the library houses a variety of yeast strains with diverse varieties, distinct performance, unique styles, and distinct characteristics. Using different yeast strains can produce Jinxing Beers with different styles, and the yeast strain specifically chosen for the Jinxing Xinyang Maojian Chinese-style craft beer determines its uniqueness in the market, making it difficult for others to imitate or copy.
