2. Fermentation Degree During Production
If the fermentation process is controlled just before it reaches its peak, the tea will continue to undergo post-fermentation over time, allowing it to be stored for a longer duration. However, if the tea is allowed to ferment to its peak right from the start, special care must be taken during storage to prevent further post-fermentation by controlling temperature and limiting air exposure. If the tea has already passed its peak fermentation point, it will struggle to achieve top quality!
