Red soils are mostly found below 650 meters altitude in low hills, with a soil layer thickness of 30 cm to 60 cm, organic matter content of 1.44% to 4.05%, and pH ranging from 4.5 to 5.5. Pu’er Tea Production: The Metamorphosis of a Single Leaf
Tea is born in the embrace of nature, gathered from the essence of heaven and earth, absorbing the vitality of the sun and moon. From green leaves to the final transformation into the "green" fragrance on one's palate, tea and its green origins are inseparable. To thoroughly explore the essence of Pu'er tea production processes such as killing the green and sun-drying, the transformation from fresh leaves to finished product is far more meticulous and sophisticated than one might imagine. Today, let's delve into the production process of Pu'er tea. Wilted Fresh Leaves In the morning mist of tea regions, just as the fog begins to dissipate, tea farmers are already busy in the fields. Red sunlight filters through the misty clouds, draping everything in a golden veil. The dewdrops on the green tea leaves wet the gloves of the pickers. The freshly picked leaves are bright green and very tender. They need to be set aside to air dry patiently. As time passes, the water content within the leaves is gradually evaporated by the scorching sun, and the once taut tea stems become limp and lie on the ground. This process is known as airing, the first step of… -

White Tea from Zhenghe: “White Peony”
"White Peony tea," a precious variety, is produced in Zhenghe, known as the "Hometown of Chinese White Tea." White Peony tea is picked at the stage of one bud and two leaves, requiring that the buds and leaves are covered with white down, referred to as "three whites." The shape of the tea is two leaves embracing a bud, with a natural leaf posture and white down covering the back of the leaves. After brewing, the liquor turns apricot yellow or orange-yellow, clear and bright, with a fresh and lasting downy fragrance. The veins are slightly red, scattered among the green leaves, earning it the praise of "red dress on a white body." The preparation method for drinking White Peony tea is similar to that of green tea but, due to the lack of kneading, the tea juice does not easily seep out, so the brewing time is slightly longer than for green tea. "White like clouds, green like dreams, clean like snow, fragrant like orchids," this tea, which is cold and cool in nature, has the effects of heat-clearing and summer-heat dispelling, making it an excellent drink for refreshing the heart and purifying the spirit in summer. It is… -
Do You Know About Chinese Tea Sets?
Compared to the traditional and standardized British ceramic tea sets, Chinese tea sets are more diverse in style and have a longer history. Today, let me introduce you to Chinese tea sets. Gaiwan In simple terms, a gaiwan is a teapot without a spout. It is said that the gaiwan originated in the Ming Dynasty (1368-1644). The gaiwan consists of three parts: a saucer, a bowl, and a lid. The lid represents heaven, the saucer represents earth, and the bowl represents man, symbolizing harmony between heaven, earth, and man. Gaiwans are typically made of porcelain because it can absorb heat and make them easy to handle. Gaiwans are usually small, with capacities ranging from 100-180ml. The advantage of a gaiwan is that even without a spout, the lid can be used to hold back the tea leaves. After brewing, the lid is slightly opened, allowing the tea liquor to be poured out while the leaves remain in the bowl. Typically, after brewing in a gaiwan, the tea is transferred to another pot to balance the concentration of the liquor. The Tea Processing of Xinyang Maojian
The Aroma Achieved Through Baking The tea processing of Xinyang Maojian not only preserves the tenderness of the buds but also enhances their aroma to a certain extent, creating a fresh, smooth, and mellow taste for Maojian tea. The production process of Xinyang Maojian is very meticulous. Before stir-frying, the fresh leaves are sorted according to variety, weather at the time of picking (rainy or sunny), time of day (morning or afternoon), and freshness. They are then graded using bamboo sieves and kept separately. The sorted tea leaves are spread out on a tray; those picked on rainy days should be spread thinly, while those picked on sunny days can be spread more thickly. Once the leaves become soft and have lost some moisture, they are ready for stir-frying. The stir-frying directly determines the quality of Xinyang Maojian, as it is the process that enhances its aroma and also makes the tea suitable for long-term storage. Its technique is also unique, consisting of three steps: raw pan, mature pan, and baking. Although this sounds simple, the actual process is particularly complex. Furthermore, the stir-frying and baking techniques of Xinyang Maojian combine elements from the production methods of Lu'an Guapian and…
