Heavy Snow: Storing Worries for Winter, Savoring the Flow of Years in Tea Aroma
"Great is the abundance, and thus the snow reaches its peak." Today marks the third solar term of winter – Heavy Snow. Heavy Snow has officially arrived. The pages on the calendar are dwindling down. A sharp chill always greets you at dawn. Opening the window reveals a bleak and desolate landscape. Hot water is being heated on the stove. A teapot sits on the table. Draw the warmest future imaginable on the windowpane. This is the ritual of Heavy Snow in winter. During the "Heavy Snow" season in the north, snow and tea whisper to each other. You come quietly with a pot of hot tea. Wear a cotton jacket and have a snowball fight. Step into the snow and listen to the crunching sounds. When tired, retreat indoors. The fire crackles and pops. Heavy Snow is silent. The stories buried by the snow melt away in the warmth of tea. A snowfall, a cup of tea. You are in the heavy snow of a cold northern night. I am basking in the warmth under the bright southern sun. Brew a good pot of tea and enjoy the warmth of winter. After enjoying the sun during the day, the…- 0

Entertainment in Tea, the Best Way to Live
Life must have entertainment. Aside from proper work and scholarly pursuits, a change of atmosphere and some entertainment can uplift one's spirit. There are many forms of entertainment, such as drinking, playing cards, chess, singing, listening to opera, painting, and drinking tea, each with its own benefits. But among all these forms of entertainment, if we were to choose one that is both convenient and refined, it might be drinking tea. 01Solo Enjoyment One doesn't drink alone, and two don't play cards. Singing and listening to opera require a group to be enjoyable. Even chess requires at least two players; one person cannot enjoy it by themselves. Only drinking tea is convenient for both groups and individuals. It can be enjoyed alone or with others, without the need for companions. 02No Restrictions on Time and Place Playing ball requires a court, and listening to opera requires a theater, and both need good weather and specific times. Other forms of entertainment also have their limitations. Only drinking tea has no restrictions on time or place. It can be done in the morning or evening, indoors or outdoors. All you need is a table, tea leaves, and teaware, making it very flexible… -
Construction and Application of the Flavor Wheel for Pu’er Tea and Fu Brick Tea
This article constructs a flavor wheel for Pu'er tea and Fu brick tea from the dimensions of aroma and taste, establishing a sensory quantitative descriptive vocabulary list for both teas. The aim is to determine sensory descriptive terms that can be used to describe Pu'er tea and Fu brick tea, providing application value for distinguishing, evaluating their sensory characteristics, and developing products related to these teas. In this study, 35 representative samples of Pu'er tea and 35 of Fu brick tea from different years and origins were selected (Table 1). Referring to the black tea sensory evaluation method in GB/T 23776—2018 "Sensory Evaluation Method for Tea," the aroma and taste of the teas were evaluated. This led to a comprehensive understanding of the sensory flavor characteristics of both types of black tea and the further construction of a flavor wheel. The Pu'er tea flavor wheel, as shown in Figure 1, includes two categories: aroma and taste. The outermost layer contains specific descriptors, totaling 40. Aroma descriptors include aged fragrance, camphor aroma, ginseng-like aroma, herbal medicine aroma, soybean aroma, hay aroma, jujube aroma, lactic acid scent, fresh aroma, floral honey aroma, mushroom aroma, smoky charred scent, and 31 others. What is the best way to store black tea? Storing in a tin can
Storing black tea in a tin can is ideal: Black tea, being a fully fermented tea, has stable internal components and can be stored at room temperature. The shelf life of loose black tea is 18 months, paper-bagged black tea lasts for 24 months, and canned black tea can be preserved for three years. Furthermore, when storing black tea, it should be sealed and kept at room temperature, in a cool, dry place away from moisture and odors. The shelf life of black tea is relatively short, generally around one year. To store black tea, it typically needs to be placed in a dry and sealed container, then stored in a dry and cool environment. Tin cans or cans made of tin are optimal, and refrigeration is not necessary. When storing black tea, choose a dry, low-temperature, and light-protected environment. Moisture easily promotes bacterial growth; thus, the moisture content of the tea cannot be too high. If it is, the tea will lose its nutrients and may become moldy or spoil. Therefore, the tea must be stored in a dry environment. If the temperature is too high, the nutritional components in the tea will break down quickly, reducing the tea's… -

Many newcomers to the tea ceremony often ask, what type of tea ware is suitable for beginners? Here's a small suggestion: when starting your tea journey, consider beginning with acquiring a host cup. So, what is a host cup? By definition, it's a cup specifically used by the host, distinct from those used by guests. It's a cup that represents your taste and personality on the tea table. There's a well-known saying in tea circles: "Without a personal cup, there's no complete tea session." On the tea table, you can often see that the cup used by the person brewing tea (the host) is different from the cups used by the guests. If you pay close attention, you'll notice that the host cup tends to be somewhat more exquisite than the cups used by guests. This article will introduce host cups based on their characteristics and types. How does a host cup reveal the host? A host cup can generally give an idea about the host's identity, taste, and preferences. Host cups come in various materials and designs, some featuring painted or carved patterns such as flowers, birds, mountains, and streams. The owner of such a cup usually has artistic…- 1

The Vast Desert and the Dunhuang Tea Journey
In early winter 2018, we held a tea gathering in front of the Mogao Caves, titled "Glimmering Light - A Visionary Experience." The tea practitioners scooped up the sand from Mogao and placed it into a glass hourglass. As the hourglass was turned over, the tea ceremony began. Water was poured, tea liquor extracted, served, and sipped. We did not invite many people; just a few tea lovers who had traveled far to sit with us in the desert. The transparent glass frames held tea notes, with sand and wind swirling outside, and the corners of the tea practitioners' robes and their footsteps. The tea wasn't scalding hot, but it still warmed us. Thinking about this tea, I returned again. Yangguan – Flickering Fires in the Wind I've been to Yangguan several times, each time bringing tea and a pot of wine. Zhao Wen carried her zither, saying she would play "Three Stanzas of Yangguan" there. On a clear winter day, the wooden walkway on the Gobi Desert was empty. The brown-red Gobi was protected by the boardwalk, the sandy and gravel ground layered deep and shallow, extending all the way to the horizon. Within these layers, air currents made… -

Purple Clay Teapots Also Have Grades, Did You Know?
Like other collectibles, purple clay teapots also have "levels," akin to the "primary market" and "secondary market" of stocks. Depending on the cost of the work and the customer base, the quality and price can vary. Generally, they can be divided into four levels: Economical and Practical Practical items are aimed at the general public for use in tea houses and ordinary households. They are characterized by simplicity, elegance, and practicality, with prices that can be settled for a few hundred yuan. Purchasing such a teapot is like walking into a simple but clean and tidy little restaurant with the words "affordable for the working class, good value for money" posted above the door. As long as you're there to satisfy your hunger, you won't feel anxious. However, today's common people's aesthetic standards are rising. Practical products can also be made exquisite, gradually approaching higher standards, and those not adapting to market demands will eventually be eliminated. Suitable for Appreciation and Use This category usually comes from skilled craftsmen, and prices are often influenced by the author's professional title level, ranging from several thousand to tens of thousands of yuan. The craftsmanship is relatively fine, making them suitable for both…- 2

Nanyan Tea
Driving for a little over an hour from Quanzhou, Fujian, you arrive at Xiping Town, Anxi County—the birthplace of Tieguanyin. Xiping was once known as Qipeng, named after the mythical great roc said to have rested here. After passing through the town, we entered the winding mountain roads, our car like a fish swimming upstream into a sea of green. Looking out the window, tea fields stretched as far as the eye could see, terraced hills and sprawling plots in various shapes and sizes. Upon entering Nanyan Village, the air was filled with a fresh, invigorating tea fragrance. Taking a deep breath, every nerve and cell relaxed. When we arrived at Taishanlou, the annual Nanyan Tieguanyin Tea King Competition was entering its final round. The villagers held their breath, intently watching the courtyard. In the center stood a large tea table, about four to five meters long, on which ten white porcelain lidded jars were lined up horizontally, each corresponding to a numbered sample from 1 to 10. Staff took samples from the jars, weighing them according to standard procedures before placing them into the jars. Facing each jar, three white porcelain tea cups were arranged in a vertical row,… -
Why is Dongting Biluochun So Expensive? The Secret Lies in the “Hands”
"Spring wind greens the south again, Biluochun is beautifully winding," it's the time of year when everyone talks about Biluochun. We talk about the fragrant tea that permeates the city, and we also talk about its staggering price. Why is Dongting Biluochun so expensive? What's the reason for its high cost? It's expensive due to its rarity, and also because of the hands involved. Dongting Biluochun, from picking to stir-frying, is done entirely by hand, taking time, effort, and care, inevitably making it costly. The first step to a cup of Jiangnan flavor is picking. How do the tea farmers on Dongting East and West Hills pick tea? When 5% of the tea shoots in the tea garden reach the initial stage of one bud and one leaf, they can be picked according to standards. First Picking The first batch of picking requires thoroughness; only when the first batch is thoroughly picked will the subsequent growth of new tea shoots be uniform in length. Otherwise, the newly sprouted shoots vary in size and length, which the farmers call "chaos." "Chaos on the tree makes it hard to pick, and chaos after picking makes it hard to sort," affecting quality. Leaving… -
Teaware, Feng Shui Knowledge You Wouldn’t Expect
Drinking tea has become a great way for people to pursue health and tranquility. Chinese tea ceremony is about cultivating the mind and seeking self-discovery; it emphasizes stillness as the foundation of health, much like the tea ceremony itself. However, dear tea enthusiasts, did you know that the use of teaware also involves feng shui? Using them well can bring benefits, but using them poorly can be detrimental. Below, we will explain in detail the feng shui aspects related to teaware. First The teaware you purchase must be intact and undamaged; do not buy flawed or broken pieces, especially those with damaged spouts. A damaged spout can invite disputes and is also impolite when entertaining guests. Second Gongfu tea typically includes an electric stove, so when the water boils, steam circulates. This should ideally be placed at a prosperous location according to the facing star, to stimulate the flow of auspicious energy, truly achieving the effect of "wind and water rising." Third When selecting a tea table for your living room, if there's a sofa, choose a table that doesn’t rise above knee level. In an office setting, select chairs with backs higher than the tea table, ensuring support. Fourth…- 1

Ji’an Suichuan: In the Mist of Tea
Mom's younger sister is middle-aged now, her thick black hair streaked with silver. Her voice, when calling out to her children, is strong and powerful, tinged with the wear and tear of time. Grandma, smiling warmly, like many other women who pick tea, has long since melded into the tea mountains. That tea affair, that long-haired girl drinking tea, who would remember any of it? It only appears in my mind, transformed and shifting, that smile like a spring breeze through the forest. The tea-picking aunt is elderly now, suffering from rheumatism, her hands shaking as she walks alone around the house. Grandpa, who used to make tea, is skin and bones; he no longer has the strength to stand by the large iron wok and stir-fry a pot of handmade tea for his children and grandchildren, much less go out to attend a tea event. This man who loved socializing and kept up appearances, after a serious illness, his face turned the color of tea. He gasped for breath and waved his hand, unwilling to eat meals at the same table as his children and grandchildren. Sometimes, getting out of bed required Dad's help. He took the food cooked…
