How to Brew Yunnan Black Tea
1. Warming the Cup. Rinse Porcelain cups, Teacups, and a pitcher with boiling water.
2. Adding the Tea. Gently scoop Yunnan black tea leaves into the cup using a tea spoon. Don't use too much tea, about 3-5 grams per serving, as too much can overpower the aroma and flavor.
3. Rinsing the Tea. Pour in water (around 85 degrees Celsius) and immediately pour it out without drinking it.
4. Brewing. Pour the cooled water (around 85 degrees Celsius) slowly along the side of the cup to swirl the leaves and fully immerse them, allowing the color, fragrance, and taste to develop evenly. Fill the cup to about 80% full.
5. Tasting. Cover the porcelain cup with its lid and wait about 20 seconds before filtering the tea into a pitcher for serving. Once the tea has cooled to a comfortable temperature, it's ready to be savored.
Should the First Infusion of Yunnan Black Tea Be Discarded?
Whether or not to rinse Yunnan black tea depends on the characteristics of the tea. Yunnan black tea is relatively tender and mild, so there's no need to rinse it before brewing.
High-quality green teas and black teas refer to those with higher grades and finer textures. Compared to lower-grade teas, these are generally cleaner and less durable when brewed. Fine teas release their internal substances more quickly in water, and rinsing them would result in a loss of nutrients, affecting the overall taste. Therefore, it is not recommended to rinse high-quality green teas or tender black teas.
