What Temperature Water is Best for Brewing Dian Hong Black Tea?
The ideal water temperature for brewing Dian Hong black tea is 95°C. Black tea is made through fermentation, and using high temperatures can fully extract polyphenols, amino acids, and other substances from the tea. Additionally, high temperatures enhance the aroma and richness of flavor. However, the 95°C refers to water that has been left to cool for about 2 minutes after boiling, not water that has not reached boiling point.
For premium black teas, a water temperature around 95°C is suitable, or you can use water at 100°C for a more intense flavor. Regardless, the water must always be brought to a boil. There isn't a definitive temperature, as lower temperatures yield a smoother taste and slower extraction of substances, increasing the tea's durability, while higher temperatures produce a richer and more fragrant taste.
Brewing Method for Dian Hong Black Tea
1. Warm the cups: Rinse porcelain cups, Teacups, and a fair cup with boiling water.
2. Add tea: Use a teaspoon to gently place the Dian Hong black tea leaves into the teacup. Do not use too much tea; 3-5g per serving is sufficient, as using too much can affect the overall quality of the tea's fragrance.
3. Rinse the tea: Pour water (around 85°C) into the Teaware and immediately pour it out. Do not drink this rinse water.
4. Brew the tea: Pour water cooled to approximately 85°C slowly along the side of the teacup to make the tea leaves turn and fully immerse them. This allows for the full release of color, aroma, and flavor, ensuring an even tea liquor. Fill the teacup to about 8/10 full with water.
5. Enjoy the tea: Cover the porcelain cup and let it steep for about 20 seconds before filtering the tea liquor into the fair cup for sharing. Once the tea is at a comfortable drinking temperature, you can enjoy it.
Notes on Brewing Dian Hong:
1. Dian Hong should not be steeped for too long, as over-Steeping can result in a bitter taste. It is best to steep for about 1 minute, and we recommend using a porcelain lid bowl or a porcelain teapot!
2. The water used to brew Dian Hong should be around 85°C, which is suitable for all types of black tea. Boil the water first, then let it cool for about 2 minutes. Do not use water that has not reached boiling point!
3. One of the greatest advantages of Dian Hong is that it can be enjoyed with additions. You can add honey, lemon, Flower tea, or other ingredients according to personal preference!
